  • 2.5 tablespoons vegetable oil for sautéing
  • 3 large green bell peppers sliced into strips
  • 1 teaspoon sea salt divided
  • 1.5 pounds ground beef lean
  • 2 cloves garlic minced
  • 12 ounces penne pasta uncooked
  • 3 cups beef broth low sodium
  • 2.5 cups cheddar cheese shredded, divided
  • 1.5 cups mozzarella cheese shredded, divided
  • 1 tablespoon parsley chopped, for garnish

Preparation Steps

  • Heat 2.5 tablespoons of vegetable oil in a large pan over medium heat. Add green bell peppers and sauté for about 10 minutes, or until they begin to soften.
  • Add the ground beef and minced garlic to the pan. Cook and break up the beef until it is browned and fully cooked, approximately 8-10 minutes. Drain any excess fat.
  • Season with sea salt and pour in the beef broth. Bring to a simmer and cook while stirring occasionally for 10 minutes.
  • Meanwhile, cook the penne pasta in a separate pot according to package instructions until al dente. Drain and set aside.
  • Add cooked pasta to the pan with the beef mixture. Stir in 2 cups of the cheddar cheese and 1 cup of mozzarella cheese until melted and creamy.
  • Sprinkle the remaining cheddar and mozzarella cheese over the top. Cover for a few minutes until the cheese melts. Garnish with chopped parsley before serving.

Notes

For added flavor, try mixing in a dash of hot sauce or a splash of Worcestershire sauce with the beef. Serve with a crisp salad or toasted bread to complete the meal.
