  • 2 lbs chicken breasts cut into strips
  • 1 tbsp olive oil
  • 2 tbsp lime juice freshly squeezed
  • 1 lb spiral pasta such as fusilli
  • 1 cup cherry tomatoes halved
  • 2 avocados diced
  • 1 cup feta cheese crumbled
  • 1 bunch cilantro chopped
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper

Preparation Steps

  • Preheat your grill to medium-high heat.
  • In a small bowl, mix together olive oil, lime juice, chili powder, garlic powder, salt, and black pepper.
  • Brush the chicken breasts with the oil mixture and place them on the grill. Cook for 6-7 minutes on each side until fully cooked.
  • While the chicken is grilling, cook the pasta according to package instructions. Drain and rinse with cold water.
  • In a large bowl, combine the cooked pasta, cherry tomatoes, avocados, feta cheese, and cilantro.
  • Once the chicken is done, slice it into strips and add it to the pasta salad. Toss everything gently to combine.
  • Serve immediately, or refrigerate for a refreshing cold salad.
