Instructions
Preparation Steps
Mix the flour, cornstarch, baking powder, and salt in a large bowl until well combined.
Add the vegetable shortening and use a fork to cut it into the flour mixture until it resembles coarse crumbs.
Gradually add warm water, stirring until a soft dough forms. Add extra water if dough is too dry.
Knead the dough lightly in the bowl until it is smooth, then cover and rest for at least 30 minutes.
Divide the dough into 8 equal pieces. Roll each piece into a ball and flatten with a rolling pin into an 8-inch disk.
Heat a dry skillet over medium-high heat. Cook each tortilla for about 30 seconds on each side or until lightly browned and cooked through.
Stack cooked tortillas in a clean towel to keep them warm and soft. Serve immediately.
Notes
Make sure to use a gluten-free flour mix that includes xanthan gum for best results. Avoid substituting cornstarch with other starches.
