  • 2.5 cups Gluten-Free All-Purpose Flour Ensure it contains xanthan gum
  • 1 cup Cornstarch Additional for dusting
  • 1.5 tsp Baking Powder
  • 1.5 tsp Salt Preferably kosher
  • 6 Tbsp Vegetable Shortening Also can substitute with lard
  • 1 cup Warm Water Plus more if needed

Preparation Steps

  • Mix the flour, cornstarch, baking powder, and salt in a large bowl until well combined.
  • Add the vegetable shortening and use a fork to cut it into the flour mixture until it resembles coarse crumbs.
  • Gradually add warm water, stirring until a soft dough forms. Add extra water if dough is too dry.
  • Knead the dough lightly in the bowl until it is smooth, then cover and rest for at least 30 minutes.
  • Divide the dough into 8 equal pieces. Roll each piece into a ball and flatten with a rolling pin into an 8-inch disk.
  • Heat a dry skillet over medium-high heat. Cook each tortilla for about 30 seconds on each side or until lightly browned and cooked through.
  • Stack cooked tortillas in a clean towel to keep them warm and soft. Serve immediately.

Notes

Make sure to use a gluten-free flour mix that includes xanthan gum for best results. Avoid substituting cornstarch with other starches.
