  • 2 tablespoons butter unsalted preferred
  • 2 tablespoons olive oil
  • 1.5 pounds chicken thighs cut into 1-inch pieces
  • 1 tablespoon herbs de Provence
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper freshly ground
  • 1 large white onion diced
  • 4 medium Yukon gold potatoes cut into 1/2-inch pieces
  • 2 cups carrots sliced
  • 1 cup mushrooms sliced
  • 2 14 oz cans cream of mushroom soup condensed
  • 2 cups heavy cream full-fat
  • 0.5 cup parmesan cheese grated
  • 1 teaspoon garlic powder
  • 1 cup chicken broth for slow cooker and Instant Pot

Preparation Steps

  • Melt butter in a large pot over medium heat.
  • Add chicken with herbs de Provence, salt, and pepper. Cook until browned.
  • Remove chicken and set aside. Add olive oil to the pot.
  • Sauté onion, potatoes, carrots, and mushrooms for about 5 minutes.
  • Return chicken, mix in cream of mushroom, heavy cream, and cheese. Stir well.
  • Simmer on low heat for 30 minutes. Add chicken broth if required for more liquid.

Notes

Feel free to substitute Yukon gold potatoes with russets or red potatoes.
