Instructions
Preparation Steps
Melt butter in a large pot over medium heat.
Add chicken with herbs de Provence, salt, and pepper. Cook until browned.
Remove chicken and set aside. Add olive oil to the pot.
Sauté onion, potatoes, carrots, and mushrooms for about 5 minutes.
Return chicken, mix in cream of mushroom, heavy cream, and cheese. Stir well.
Simmer on low heat for 30 minutes. Add chicken broth if required for more liquid.
