  • 1 cup all-purpose flour for thickening
  • 5 cups vegetable broth
  • 1 cup heavy cream

  • Sear the chicken: Season chicken with salt and pepper. In a large pot, heat canola oil over medium-high heat. Sear chicken for 3-4 minutes on each side. Remove and set aside.
  • Build the Soup: In the same pot, add 2 tablespoons butter. Saute onions and carrots until onions are translucent. Add garlic and cook for another minute.
  • Add 1 cup flour and stir to coat vegetables. Gradually pour in vegetable broth while stirring constantly to avoid lumps. Add cream, stirring until well combined.
  • Return chicken to the pot and simmer for about 20 minutes until the chicken is fully cooked. Remove chicken, shred it, and return to the pot.
  • Prepare Dumplings: Mix flour, baking powder, and a pinch of salt in a bowl. Add milk and melted butter. Stir until just combined.
