Instructions
Preparation Steps
Heat vegetable oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
Add the ground turkey to the skillet, breaking it apart with a spoon, and cook until browned all over, about 8 minutes.
Mix in the chopped bell peppers and barbecue sauce. Cook for 3 minutes to let the flavors meld.
Pour in the chicken broth and add the rotini pasta. Bring to a boil, cover the skillet, and simmer for 12-15 minutes until the pasta is tender.
Lower the heat and stir in the heavy cream and 3 cups of shredded Monterey Jack cheese until melted and creamy.
Stir in the Dijon mustard and diced dill pickles. Season with black pepper to taste.
Garnish with additional cheese, if desired, and serve hot.
Notes
To give this dish an extra kick, you can add a few dashes of hot sauce or some chili flakes when adding the barbecue sauce.
