  • 2 tablespoons vegetable oil for sautéing
  • 1 medium red onion finely diced
  • 2 pounds ground turkey lean
  • 1 cup chopped bell peppers red and green
  • 3 tablespoons barbecue sauce smoky
  • 3 cups chicken broth low sodium
  • 1 pound rotini pasta uncooked
  • 1 cup heavy cream
  • 3 cups Monterey Jack cheese shredded, plus more for garnish
  • 4 tablespoons Dijon mustard
  • 0.5 cup diced dill pickles
  • 0.5 teaspoons ground black pepper freshly ground, to taste

Preparation Steps

  • Heat vegetable oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  • Add the ground turkey to the skillet, breaking it apart with a spoon, and cook until browned all over, about 8 minutes.
  • Mix in the chopped bell peppers and barbecue sauce. Cook for 3 minutes to let the flavors meld.
  • Pour in the chicken broth and add the rotini pasta. Bring to a boil, cover the skillet, and simmer for 12-15 minutes until the pasta is tender.
  • Lower the heat and stir in the heavy cream and 3 cups of shredded Monterey Jack cheese until melted and creamy.
  • Stir in the Dijon mustard and diced dill pickles. Season with black pepper to taste.
  • Garnish with additional cheese, if desired, and serve hot.

Notes

To give this dish an extra kick, you can add a few dashes of hot sauce or some chili flakes when adding the barbecue sauce.
