  • 3 tablespoons olive oil
  • 1.5 lbs boneless chicken thighs cut into 1-inch pieces
  • 1 teaspoon salt plus more to taste
  • 0.5 teaspoon black pepper
  • 2.5 cups jasmine rice uncooked
  • 4 cups vegetable broth
  • 20 oz frozen broccoli florets
  • 3.5 cups shredded mozzarella cheese divided

Preparation Steps

  • Heat olive oil over medium-high heat in a large pot. Add chicken pieces, salt, and pepper. Cook until browned on all sides, about 8-10 minutes.
  • Stir in the jasmine rice and vegetable broth. Bring to a boil, then reduce heat to low. Cover and let simmer for 18-20 minutes, until rice is tender and liquid is absorbed.
  • While rice is cooking, steam the broccoli florets until tender-crisp. Chop into bite-sized pieces.
  • Once rice is done, remove from heat and stir in the cooked broccoli and 2 cups of mozzarella cheese. Mix until cheese is melted.
  • Spread remaining mozzarella cheese over the top of the mixture. Cover and let sit for 2-3 minutes or until cheese is fully melted.
  • Serve the dish immediately, ensuring an even distribution of chicken, rice, broccoli, and melted cheese in each portion.

Notes

For a different flavor, use smoked gouda instead of mozzarella. Add a splash of lemon juice for a fresh finish. Keep leftovers in the fridge for up to 3 days.
