Heat olive oil over medium-high heat in a large pot. Add chicken pieces, salt, and pepper. Cook until browned on all sides, about 8-10 minutes.
Stir in the jasmine rice and vegetable broth. Bring to a boil, then reduce heat to low. Cover and let simmer for 18-20 minutes, until rice is tender and liquid is absorbed.
