  • 3 pounds beef stew meat cut into 1-inch pieces
  • 4 tablespoons olive oil
  • 2 cups beef broth low sodium
  • 3 tablespoons tomato paste
  • 1 cup red wine optional
  • 3 cloves garlic minced
  • 1 large onion diced
  • 2 large carrots sliced
  • 1 cup frozen peas
  • 16 pieces taco shells crispy
  • 2 cups cheese shredded cheddar

Preparation Steps

  • In a large pot, heat half of the olive oil over medium-high heat. Add beef stew meat in batches, browning on all sides. Remove and set aside.
  • In the same pot, add the remaining olive oil. Sauté onions and garlic until translucent.
  • Stir in carrots, tomato paste, and wine, cooking for 2-3 minutes. Add beef broth and browned beef, bringing to a boil.
  • Reduce heat to low, cover, and let the stew simmer for 2.5 hours. Add peas in the last 15 minutes.
  • To serve, stuff taco shells with beef stew and top with shredded cheese.

Notes

For an extra twist, top tacos with fresh cilantro or a dollop of sour cream.
