Instructions
Preparation Steps
In a large pot, heat half of the olive oil over medium-high heat. Add beef stew meat in batches, browning on all sides. Remove and set aside.
In the same pot, add the remaining olive oil. Sauté onions and garlic until translucent.
Stir in carrots, tomato paste, and wine, cooking for 2-3 minutes. Add beef broth and browned beef, bringing to a boil.
Reduce heat to low, cover, and let the stew simmer for 2.5 hours. Add peas in the last 15 minutes.
To serve, stuff taco shells with beef stew and top with shredded cheese.
