  • 0.5 teaspoon black pepper freshly ground
  • 1.5 cups almond flour finely ground
  • 4 eggs large, at room temperature
  • 3 tablespoons coconut oil melted

Preparation Steps

  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Grate the cauliflower using a food processor or box grater until it reaches a rice-like texture.
  • In a microwave-safe bowl, cook the grated cauliflower for 4 minutes or until tender. Let it cool slightly.
  • Using a clean tea towel, squeeze out as much moisture as possible from the cooked cauliflower.
  • In a mixing bowl, combine the cauliflower, salt, pepper, and almond flour. Mix well.
  • Whisk together the eggs and melted coconut oil, then add them to the cauliflower mixture and stir to combine.
  • Scoop a portion of the mixture onto the prepared sheets and flatten it into a tortilla shape.
  • Bake in the preheated oven for 15 minutes, then flip each tortilla and bake for another 5-8 minutes.

Notes

These cauliflower tortillas can be stored in an airtight container in the fridge for up to 5 days or frozen for longer shelf life. Perfect for low-carb meals!
