  • 4 pints Cherry Tomatoes Halved, or use grape tomatoes
  • 8 cloves Garlic Minced
  • 1.5 sticks Unsalted Butter Divided
  • 1 cup White Wine Good quality for drinking
  • 0.5 cup Vegetable Broth
  • 0.25 teaspoon Red Pepper Flakes Optional, adjust to taste
  • 2 pounds Pasta Spaghetti or linguine preferred
  • 1 cup Parmesan Cheese Freshly grated, divided
  • 0.5 cup Fresh Basil Chopped, for garnish
  • 1 pinch Salt and Black Pepper To taste

Preparation Steps

  • Melt 6 tablespoons of butter in a large skillet over medium heat, then add minced garlic and sauté for 1 minute.
  • Add halved cherry tomatoes and coat them with garlic butter. Reduce heat, cover, and let it simmer for 15-20 minutes.
  • Pour in white wine and vegetable broth, add red pepper flakes, then bring to a simmer. Cook until tomatoes are soft and burst.
  • Boil the pasta according to package instructions until al dente, reserving one cup of pasta water before draining.
  • Stir in the remaining butter into the sauce, adjust seasoning if necessary.
  • Combine the drained pasta with the tomato sauce in the skillet. Use reserved pasta water to adjust sauce consistency.
  • Mix in half of the Parmesan cheese until combined, serve the pasta garnished with fresh basil and remaining cheese.
