  • 2 lbs boneless chicken thighs cut into 1-inch pieces
  • 2 tablespoons olive oil divided
  • 3 tablespoons butter unsalted
  • 1 cup frozen peas
  • 1.5 cups arborio rice
  • 4 cups chicken broth low-sodium
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 1 teaspoon black pepper
  • 1 teaspoon salt to taste
  • 2 tablespoons parsley fresh, chopped for garnish

Preparation Steps

  • In a large skillet, heat 1 tablespoon olive oil over medium heat. Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove from skillet and set aside.
  • In the same skillet, add remaining olive oil and butter. Add arborio rice and cook over medium heat, stirring for 2-3 minutes until rice is slightly toasted.
  • Add chicken broth to the skillet and stir. If desired, season with salt and pepper. Bring to a boil then reduce heat to low and cover. Cook for 15-18 minutes or until rice is tender.
  • Uncover the skillet, stir in heavy cream and Parmesan cheese. Mix until fully combined and creamy.
  • Return the chicken to the skillet along with the frozen peas. Stir to combine and let cook for another 5 minutes until chicken is fully cooked and peas are hot.
  • Adjust seasoning with additional salt and pepper if needed.
