Butter a baking sheet and line it with parchment paper, then grease the parchment.
In a large saucepan, stir together sugar, corn syrup, water, and food coloring. Heat over medium-high, stirring until dissolved.
Attach a candy thermometer and boil without stirring until it reaches 300°F.
Remove from heat and stir in cinnamon extract. Pour onto the prepared sheet to cool.
Let the candy rest at room temperature until firm, at least 4 hours.
Dust with powdered sugar and break into pieces.
Toss pieces with remaining powdered sugar before storing.
