Preparation Steps
Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper.
In a large mixing bowl, combine eggs, melted butter, and salt.
Add ricotta cheese and mix until smooth.
Stir in cheddar cheese, panko breadcrumbs, oregano, and chives. Combine until mixture forms a thick batter.
Scoop out tablespoonfuls of the mixture and roll into balls. Place on prepared baking sheet.
Bake for 20-25 minutes or until golden brown and set.
