  • 1.5 lbs beef stew meat cut into 1-inch cubes
  • 2 tablespoons olive oil divided
  • 4 cups beef broth low sodium preferred
  • 1 cup carrots chopped
  • 1.5 cups egg noodles uncooked
  • 2 cups mushrooms sliced
  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • 3 stalks celery diced
  • 1 cup frozen peas thawed
  • 1 bay leaf bay leaf
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1.5 teaspoons black pepper freshly ground
  • 1 teaspoon salt to taste

Preparation Steps

  • In a bowl, season the beef with salt and black pepper.
  • Heat a tablespoon of olive oil in a large pot. Brown the beef in batches and remove it from the pot.
  • In the same pot, add the remaining olive oil and sauté the onion, carrots, and celery until soft.
  • Add the garlic and mushrooms, cooking them until fragrant.
  • Return the beef to the pot, adding beef broth, Worcestershire sauce, thyme, and a bay leaf. Bring to a boil.
  • Reduce the heat and simmer for about 1 hour until the beef is tender.
  • Stir in the peas and boil the egg noodles separately until al dente. Add noodles to each serving bowl and ladle soup on top.

Notes

For a creamier texture, consider adding a splash of cream at the end of cooking. Adjust seasoning to taste before serving.
