Instructions
Preparation Steps
In a bowl, season the beef with salt and black pepper.
Heat a tablespoon of olive oil in a large pot. Brown the beef in batches and remove it from the pot.
In the same pot, add the remaining olive oil and sauté the onion, carrots, and celery until soft.
Add the garlic and mushrooms, cooking them until fragrant.
Return the beef to the pot, adding beef broth, Worcestershire sauce, thyme, and a bay leaf. Bring to a boil.
Reduce the heat and simmer for about 1 hour until the beef is tender.
Stir in the peas and boil the egg noodles separately until al dente. Add noodles to each serving bowl and ladle soup on top.
Notes
For a creamier texture, consider adding a splash of cream at the end of cooking. Adjust seasoning to taste before serving.
