Instructions
Preparation Steps
Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes.
In a large skillet over medium heat, cook ground turkey and diced onions until the meat is no longer pink, about 5-7 minutes. Drain any excess liquid.
Stir in the garlic powder and diced tomatoes. Simmer the mixture for 5 minutes.
Mix the cooked rice with the turkey mixture until well combined.
Stuff each bell pepper with the turkey and rice mixture, and place them upright in a baking dish.
Sprinkle the tops with mozzarella cheese and bake for 30-35 minutes, or until the cheese is melted and bubbly.
Notes
Try adding a pinch of red pepper flakes for a spicy kick! To save time, use pre-cooked rice.
