How to Make Baked Stuffed Bell Peppers: 6 Simple Steps!

These stuffed bell peppers are filled with a flavorful combination of ground turkey, rice, and vegetables, sure to make any meal a delight!

  • 4 large bell peppers any color
  • 1.5 pounds ground turkey can substitute ground chicken
  • 1 cup cooked rice use white or brown rice
  • 1 medium onion diced
  • 1 teaspoon garlic powder
  • 1 cup diced tomatoes canned, undrained
  • 1 cup shredded mozzarella cheese

Preparation Steps

  • Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes.
  • In a large skillet over medium heat, cook ground turkey and diced onions until the meat is no longer pink, about 5-7 minutes. Drain any excess liquid.
  • Stir in the garlic powder and diced tomatoes. Simmer the mixture for 5 minutes.
  • Mix the cooked rice with the turkey mixture until well combined.
  • Stuff each bell pepper with the turkey and rice mixture, and place them upright in a baking dish.
  • Sprinkle the tops with mozzarella cheese and bake for 30-35 minutes, or until the cheese is melted and bubbly.

Notes

Try adding a pinch of red pepper flakes for a spicy kick! To save time, use pre-cooked rice.
