  • 3 oz strawberry gelatin
  • 2 cups boiling water
  • 1 cup cold water
  • 8 oz whipped topping thawed
  • 1 cup fresh strawberries sliced for garnish

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • Prepare the lemon cake mix according to the package directions and pour the batter into the prepared dish. Bake for 25-30 minutes or until a toothpick comes out clean.
  • While the cake is baking, combine strawberry gelatin with 2 cups of boiling water in a medium bowl. Stir until dissolved, then add 1 cup of cold water.
  • Remove cake from oven and let cool for 15 minutes. Poke holes all over the cake with a fork.
  • Pour gelatin mixture evenly over the cake, ensuring it fills the holes. Refrigerate for at least 1 hour until set.
  • Spread whipped topping evenly over the chilled cake.
  • Garnish with sliced strawberries before serving.

Notes

To enhance the flavor, add a teaspoon of lemon zest to the cake batter. Leftovers can be stored in the refrigerator for up to 3 days.
