Preparation Steps

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a heatproof bowl, melt the dark chocolate over a pot of simmering water.
  • In a separate bowl, beat the egg yolks and sugar until thick and pale. Fold in the melted chocolate.
  • Whisk the egg whites until stiff peaks form and gently fold them into the chocolate mixture. Add the flour and mix gently.
  • Spread the batter evenly onto the prepared baking sheet and bake for 10-12 minutes.
  • Once cooled, spread the whipped cream and vanilla mixture over the cake, roll it up, and cover with chocolate ganache.

Notes

To enhance the flavor, consider adding a splash of coffee liqueur to the filling.
