  • 1 teaspoon Xanthan gum omit if flour blend includes it
  • 2 teaspoons Baking powder
  • 1 teaspoon Kosher salt
  • 1.5 cups Nonfat Greek yogurt
  • 4 tablespoons Water lukewarm, plus more if needed
  • 8 ounces Low-moisture mozzarella cheese finely diced
  • 1 cup Tomato sauce plus more for serving
  • Heavy cream for brushing

Preparation Steps

  • Preheat your oven to 400°F (200°C). Line two rimmed baking sheets with parchment paper.
  • In a large bowl, whisk together the gluten-free flour, xanthan gum, baking powder, and salt.
  • Add the Greek yogurt and lukewarm water to the dry ingredients. Mix until a dough forms and begins to hold together.
  • If the dough is too dry, add more water, one tablespoon at a time, until it comes together without being stiff.
  • Lightly dust a clean work surface with gluten-free flour. Turn the dough out and gently knead it for a minute or two.
  • Roll the dough to 1/8-inch thickness, then cut into 2 1/2 x 1 1/2 inch rectangles. Reroll scraps to make more rectangles.
  • Spread 1 teaspoon of tomato sauce on one half of each rectangle and sprinkle with mozzarella cheese.
  • Fold the dough over and press the edges to seal. Place on prepared baking sheets, spaced 1 inch apart.
  • Make two small vents on top of each roll and brush with heavy cream.
  • Bake for 15-17 minutes until golden brown. Serve warm with extra tomato sauce.

Notes

For a richer flavor, feel free to experiment with additional fillings like pepperoni or roasted vegetables. These pizza bites also freeze well for later indulgence.
