Preheat your oven to 400°F (200°C). Line two rimmed baking sheets with parchment paper.
In a large bowl, whisk together the gluten-free flour, xanthan gum, baking powder, and salt.
Add the Greek yogurt and lukewarm water to the dry ingredients. Mix until a dough forms and begins to hold together.
If the dough is too dry, add more water, one tablespoon at a time, until it comes together without being stiff.
Lightly dust a clean work surface with gluten-free flour. Turn the dough out and gently knead it for a minute or two.
Roll the dough to 1/8-inch thickness, then cut into 2 1/2 x 1 1/2 inch rectangles. Reroll scraps to make more rectangles.
Spread 1 teaspoon of tomato sauce on one half of each rectangle and sprinkle with mozzarella cheese.
Fold the dough over and press the edges to seal. Place on prepared baking sheets, spaced 1 inch apart.
Make two small vents on top of each roll and brush with heavy cream.
