  • 24 gummy fish
  • 12 mini umbrellas for decoration

Preparation Steps

  • Preheat your oven to 350°F (175°C). Line a cupcake tray with paper liners.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
    0.5 cup granulated sugar, 0.75 cup unsalted butter
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  • Alternate adding the flour and milk into the mixture, starting and ending with the flour. Mix until just combined.

  • Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.
  • Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.
  • Once cooled, spread frosting over each cupcake and dip into the crushed graham crackers to create a sandy beach effect.
