Preparation Steps
Preheat your oven to 375°F (190°C).
Grease a baking sheet lightly with olive oil or cooking spray.
Season chicken breasts with salt and pepper on both sides and set aside.
In a shallow bowl, mix breadcrumbs, parmesan cheese, and Italian herbs until well combined.
In a separate small bowl, combine mayonnaise and olive oil.
Brush each chicken breast with the mayo and olive oil mixture ensuring it is fully coated.
Coat each piece of chicken in the breadcrumb and cheese mixture, pressing the mixture onto the chicken to adhere.
Place the coated chicken onto the prepared baking sheet.
Bake in the preheated oven for 25-30 minutes or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
Let the chicken rest for 5 minutes before slicing and serving.
Notes
For an added touch of heat, add a pinch of red pepper flakes to the breadcrumb mixture before coating the chicken.
