  • 1.5 cups breadcrumbs preferably panko
  • 1 cup grated parmesan cheese freshly grated
  • 1 tablespoon Italian herbs dried
  • 2 tablespoons olive oil extra virgin
  • 2 tablespoons mayonnaise for binding

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • Grease a baking sheet lightly with olive oil or cooking spray.
  • Season chicken breasts with salt and pepper on both sides and set aside.
  • In a shallow bowl, mix breadcrumbs, parmesan cheese, and Italian herbs until well combined.
  • In a separate small bowl, combine mayonnaise and olive oil.
  • Brush each chicken breast with the mayo and olive oil mixture ensuring it is fully coated.
  • Coat each piece of chicken in the breadcrumb and cheese mixture, pressing the mixture onto the chicken to adhere.
  • Place the coated chicken onto the prepared baking sheet.
  • Bake in the preheated oven for 25-30 minutes or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
  • Let the chicken rest for 5 minutes before slicing and serving.

Notes

For an added touch of heat, add a pinch of red pepper flakes to the breadcrumb mixture before coating the chicken.
