  • 1 cup heavy cream plus extra for brushing
  • 2 large eggs lightly beaten
  • 2 teaspoons pure vanilla extract
  • 2 cups fresh blueberries or frozen, do not thaw
  • 2 tablespoons coarse sugar for topping

Vanilla Icing (Optional)

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 0.5 teaspoon vanilla extract

Preparation Steps

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Mix the flour, 3/4 cup of sugar, baking powder, cinnamon, and salt in a large bowl.
  • Grate the frozen butter into the flour mixture and use your fingers to combine until crumbly.
  • Whisk together the cream, eggs, and vanilla. Pour over the dry ingredients and mix just until combined.
  • Gently fold in the blueberries, being careful not to break them.
  • Turn the dough onto a floured surface; pat into a 1-inch thick circle. Cut into 8 wedges.
  • Place on the prepared baking sheet, brush with cream, and sprinkle with coarse sugar. Chill for 15 minutes.
  • Bake for 22-25 minutes until golden brown. Cool on a wire rack.
  • For icing, combine powdered sugar, milk, and vanilla. Drizzle over cooled scones if desired.

Notes

For a twist, substitute the blueberries with raspberries or a berry mix. Ensure all ingredients are cold for best results. Do not overhandle the dough.
