Instructions
Preparation Steps
Heat the olive oil in a large skillet over medium-high heat.
Add the beef slices to the skillet and cook until browned on all sides. Remove and set aside.
In the same skillet, add the chopped onions, mushrooms, and garlic. Sauté until the onions are translucent and the mushrooms are tender.
Pour the beef broth into the skillet and bring to a simmer. Stir in the heavy cream.
Mix cornstarch with a bit of water to make a slurry, and add to the skillet. Stir until the sauce thickens.
Return the beef slices to the skillet and sprinkle with thyme, salt, and pepper. Mix well to coat the beef with the sauce.
Simmer for 5 more minutes, allowing flavors to meld. Serve hot with mashed potatoes or rice.
Notes
For an extra depth of flavor, deglaze the skillet with a splash of red wine after browning the meat.
