  • 4 cups shredded rotisserie chicken preferably from herb-seasoned chicken
  • 2 tablespoons olive oil divided
  • 3 cups Alfredo sauce store-bought or homemade
  • 1.5 cups ricotta cheese whole milk
  • 2 cups fresh spinach chopped
  • 1.5 cups shredded mozzarella cheese divided
  • 1 package lasagna noodles 12 to 16 ounces

Preparation Steps

  • Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish lightly with olive oil.
  • In a skillet, heat 1 tablespoon olive oil over medium heat. Sauté the chopped spinach until wilted, about 2-3 minutes. Set aside.
  • Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment paper.
  • In a large bowl, combine shredded chicken, ricotta cheese, sautéed spinach, and 1 cup of mozzarella cheese. Mix well.
  • Spread a thin layer of Alfredo sauce on the bottom of the prepared baking dish.
  • Spread a generous amount of the chicken mixture onto each lasagna noodle, then roll up tightly.
  • Place the roll-ups, seam side down, in the baking dish. Pour remaining Alfredo sauce over the roll-ups. Top with the remaining mozzarella cheese.
  • Bake in the preheated oven for 35-40 minutes until the cheese is bubbly and golden brown. Let it rest for a few minutes before serving.

Notes

Serve with a side salad or garlic bread for a complete meal.
