  • 1 cup packed light brown sugar
  • 2 large eggs At room temperature
  • 2 teaspoons vanilla extract Pure
  • 1.5 cups dark chocolate chips
  • 1 cup semi-sweet chocolate chips Extra for topping
  • 1 cup chopped almonds Lightly toasted
  • 1 cup dried tart cherries Coarsely chopped

Preparation Steps

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy, approximately 3-5 minutes.
  • Add in the eggs one at a time, beating well after each addition, then mix in vanilla extract.
  • Gradually mix in the dry ingredients on low speed until just combined. Do not overmix.
  • Gently fold in the dark chocolate chips, semi-sweet chocolate chips, almonds, and cherries until evenly distributed.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between cookies.
  • Bake for 10 minutes, then press extra chocolate chips onto the tops of cookies. Bake for another 2-5 minutes until edges are set and centers are soft.
  • Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a deeper flavor, refrigerate the dough for at least an hour or overnight before baking. Additionally, sprinkle a pinch of sea salt on warm cookies to enhance the chocolate intensity. Store in an airtight container at room temperature for up to one week.
