Instructions
Preparation Steps
Bring a large pot of salted water to a boil and cook fettuccine until al dente. Drain and set aside.
In a bowl, mix flour with 1 tsp salt, pepper, and half of the Italian seasoning. Dredge chicken strips in the flour mixture.
Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown, about 4 minutes per side. Remove and set aside.
In the same skillet, melt butter and sauté chopped red onion for 5 minutes until translucent. Add garlic and cherry tomatoes, cooking for another minute.
Sprinkle 2 tablespoons of flour over the onion mixture. Stir well and cook for 1 minute.
Pour white wine into the skillet, scraping up any browned bits. Simmer for 3 minutes until slightly reduced.
Reduce heat and add remaining Italian seasoning, salt, and red pepper flakes. Stir in the heavy cream and Parmesan cheese, cooking until the sauce is thick and smooth.
Toss cooked fettuccine in the sauce, ensuring it’s well-coated. Return chicken to the skillet, nestling into the pasta. Garnish with basil and serve hot.
Notes
This dish pairs well with a crisp green salad and crusty bread. Adjust the spice levels by varying the amount of red pepper flakes, and enjoy with a chilled glass of white wine.
