  • 1.5 cups granulated sugar
  • 0.5 cups canola oil
  • 4 large eggs at room temperature
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.5 cups buttermilk
  • 2 tablespoons lime zest freshly grated
  • 2.5 cups fresh blueberries tossed in a tablespoon of flour

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, cream the butter and sugar together until light and fluffy. Mix in the oil, then add the eggs one at a time, beating well after each addition.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the butter mixture, alternating with buttermilk, beginning and ending with the dry ingredients. Stir in lime zest.
  • Gently fold in the blueberries. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Notes

To add extra flavor, sprinkle additional lime zest on the frosting. Refrigerate for up to 3 days for best taste.
