  • 2.5 lbs chicken thighs boneless, skinless
  • 1 cup bell peppers sliced
  • 1 cup onions sliced
  • 1.5 cups fresh parsley chopped
  • 0.5 cup olive oil
  • 1.25 cups chicken broth low-sodium
  • 2 tbsp lemon juice freshly squeezed
  • 3 tbsp unsalted butter cubed
  • 4 cloves garlic minced

Preparation Steps

  • Season the chicken thighs with salt and pepper on both sides. In a large skillet, heat olive oil over medium-high heat. Add chicken to the skillet and sear until golden brown, approximately 5-7 minutes per side. Remove and set aside.
  • In the same skillet, add bell peppers and onions. Sauté for about 5 minutes until softened.
  • Add minced garlic to the skillet and sauté for another 1-2 minutes until fragrant.
  • Pour in chicken broth and lemon juice. Bring to a boil, then reduce heat to simmer and cook for 5 minutes.
  • Return the chicken thighs to the skillet, nestling them into the sauce. Cover and let cook for an additional 10 minutes.
  • Uncover and stir in butter until melted and sauce is well blended and glossy.
  • Garnish with fresh parsley before serving.

Notes

This dish pairs well with rice or crusty bread to absorb the delicious sauce. Adjust salt and pepper to taste.
