  • 2 lbs boneless, skinless turkey breasts halved
  • 1.5 lbs refrigerated tortellini cheese-stuffed
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 1 large white onion finely chopped
  • 5 cloves garlic minced
  • 8 oz can sun-dried tomatoes drained
  • 3.5 cups vegetable broth
  • 3 tbsp cornstarch
  • 1.5 cups heavy whipping cream
  • 1.25 cups grated mozzarella cheese plus more for serving
  • 1 cup fresh spinach leaves roughly chopped
  • 1.5 tsp herb seasoning Italian blend
  • 0.5 tsp smoked paprika
  • 1 to taste salt
  • 1 to taste freshly ground black pepper

Preparation Steps

  • Season the turkey breasts with half the herb seasoning, smoked paprika, salt, and pepper. Set aside.
  • If your slow cooker has a sauté function, heat olive oil and butter. Sear the turkey breasts until browned on each side, about 3-4 minutes each.
  • Remove the turkey and set it aside. Add the chopped onion to the slow cooker, cooking until translucent, about 4 minutes. Stir in the garlic and cook until fragrant.
  • Place the turkey back into the slow cooker. In a bowl, whisk vegetable broth with cornstarch until smooth, then pour over the turkey.
  • Add sun-dried tomatoes, remaining herb seasoning, salt, and pepper. Cover and cook on high for 2.5 hours, or until turkey shreds easily.
  • Shred the turkey in the slow cooker with two forks. Stir in heavy cream and mozzarella until melted.
  • Submerge tortellini into the sauce and cook for an additional 25 minutes, or until tender. Add spinach, adjust seasoning, and serve hot.

Notes

Garnish with extra mozzarella cheese and fresh basil for an enhanced flavor.
