A sweet and tangy honey mustard chicken recipe featuring tender chicken breasts glazed with a homemade honey mustard sauce, perfect for a quick weeknight dinner.
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
In a small bowl, whisk together the Dijon mustard, honey, olive oil, minced garlic, apple cider vinegar, salt, black pepper, thyme, and paprika until smooth. Set aside.
Place the chicken breasts on the prepared baking sheet. Season both sides with additional salt and pepper if desired.
Pour half of the honey mustard mixture over the chicken breasts, spreading evenly to coat. Reserve the remaining mixture for basting later.
Bake the chicken in the preheated oven for 20 minutes. Remove from oven and brush the reserved honey mustard glaze over the top of each piece.
Return the chicken to the oven and bake for an additional 5–10 minutes, or until the internal temperature reaches 165°F (74°C) and the glaze is caramelized.
Let the chicken rest for 5 minutes before slicing. Serve warm, optionally drizzling with extra glaze from the pan.
