Preparation Steps
In a small bowl, whisk together honey, adobo sauce, olive oil, garlic, smoked paprika, cumin, salt, black pepper, apple cider vinegar, and chopped chipotle pepper (if using) to make the marinade.
Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Turn to coat evenly. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
Preheat oven to 400°F (200°C) or heat a grill or skillet over medium-high heat.
Remove chicken from marinade, letting excess drip off. Reserve remaining marinade for basting.
Cook chicken: If baking, place on a lined baking sheet and bake for 20–25 minutes, basting once halfway through, until internal temperature reaches 165°F (74°C). If grilling or pan-searing, cook 5–7 minutes per side, basting occasionally, until fully cooked.
Let chicken rest for 5 minutes before slicing. Serve with extra sauce if desired.
Notes
For a milder flavor, omit the chopped chipotle pepper. Serve with rice, roasted vegetables, or a fresh salad.
