Preparation Steps
In a large bowl, combine the powdered sugar, butter, and peppermint extract. Mix until smooth.
Form the mixture into small 1-inch patties and place them on a baking sheet lined with parchment paper. Refrigerate until set.
Melt the chocolate chips with vegetable oil in a microwave or double boiler. Stir until smooth.
Dip each peppermint patty into the melted chocolate, ensuring it is fully coated. Return to the parchment paper.
Refrigerate the patties until the chocolate is set.
