Preparation Steps
In a large bowl, combine the chicken pieces with chopped jalapeños, ensuring they are well coated.
Mix flour, cornstarch, paprika, and salt in a separate bowl. Gradually add the sparkling water and whisk to create a smooth batter.
Heat oil in a deep frying pan to 350°F.
Dip each chicken piece into the batter, shake off excess, and carefully drop into the hot oil. Fry until golden brown.
In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, honey, and garlic powder for the dipping sauce.
Notes
Adjust the jalapeño quantity to control the spice level. These bites can be frozen for later use. To reheat, bake at 375°F for 12-15 minutes.
