Instructions
Preparation Steps
Melt the butter in a large pot over medium heat, add onions and cook until caramelized.
Add beef broth and thyme, simmer for 30 minutes.
Preheat oven to broil. Ladle soup into oven-safe bowls.
Top each bowl with a slice of baguette and Gruyère cheese, broil until cheese is melted and bubbly.
Notes
For a deeper flavor, try adding a splash of dry sherry or white wine while cooking the onions.
