  • 1.5 pounds chicken breasts boneless and skinless
  • 8 cups chicken broth
  • 2 cups carrots sliced
  • 1 cup celery chopped
  • 1 cup onion chopped
  • 3 cloves garlic minced
  • 8 oz egg noodles
  • 1 tablespoon olive oil
  • 1 teaspoon thyme dried
  • 1 teaspoon parsley dried
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • In a large pot, heat olive oil over medium heat. Add garlic, onion, carrots, and celery. Sauté until tender.
  • Add chicken broth, thyme, parsley, salt, and pepper. Bring to a boil.
  • Add chicken breasts and reduce heat to simmer. Cover and cook for 20 minutes, or until chicken is cooked through.
  • Remove chicken, shred it, and add it back to the pot.
  • Stir in egg noodles and cook for additional 10 minutes, or until noodles are tender.

Notes

This soup can be stored in the refrigerator for up to 3 days. Reheat on the stove for best results.
