Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat. Add garlic, onion, carrots, and celery. Sauté until tender.
Add chicken broth, thyme, parsley, salt, and pepper. Bring to a boil.
Add chicken breasts and reduce heat to simmer. Cover and cook for 20 minutes, or until chicken is cooked through.
Remove chicken, shred it, and add it back to the pot.
Stir in egg noodles and cook for additional 10 minutes, or until noodles are tender.
Notes
This soup can be stored in the refrigerator for up to 3 days. Reheat on the stove for best results.
