Hobo Casserole

A hearty and simple "hobo casserole" made with common pantry staples. Perfect for a quick weeknight meal.

  • 0.5 pound ground beef
  • 1 medium onion chopped
  • 2 cups canned diced tomatoes undrained
  • 1 can canned cream of mushroom soup
  • 1 pound potatoes peeled and cubed
  • 0.5 cup shredded cheddar cheese
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper

Preparation Steps

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large skillet, brown the ground beef and chopped onion over medium heat. Drain off any excess grease.
  • Stir in the diced tomatoes (with their juice), cream of mushroom soup, cubed potatoes, salt, and pepper. Mix well.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • Cover with foil and bake for 30 minutes.
  • Remove the foil, sprinkle the shredded cheddar cheese over the top, and bake for another 15 minutes, or until bubbly and the potatoes are tender.
  • Let stand for a few minutes before serving.

Notes

This is a very forgiving recipe. Feel free to add other vegetables like corn or peas if you have them on hand.
