  • 4 lbs beef chuck roast grass-fed recommended
  • 3 tbsp olive oil
  • 1 tbsp sea salt to taste
  • 1 tsp black pepper freshly ground

Garlic Herb Butter

  • 1 cup unsalted butter softened
  • 5 cloves garlic minced
  • 2 tbsp fresh thyme chopped
  • 3 tbsp chopped parsley fresh
  • 1 tsp lemon zest
  • 2 tbsp Dijon mustard

Preparation Steps

  • Preheat the oven to 375°F (190°C). Pat the roast dry with paper towels and season with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
  • In a bowl, mix softened butter with garlic, thyme, parsley, lemon zest, and Dijon mustard.
  • Place the roast in a roasting pan and generously coat with the garlic herb butter.
  • Roast in the oven for about 60 minutes or until the internal temperature reaches 135°F (for medium-rare).
  • Remove from the oven, cover with foil, and let rest for 10 minutes before slicing.

Notes

For extra flavor, you can marinate the meat overnight in the refrigerator.
