Preparation Steps
Preheat the oven to 375°F (190°C). Pat the roast dry with paper towels and season with salt and pepper.
In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
In a bowl, mix softened butter with garlic, thyme, parsley, lemon zest, and Dijon mustard.
Place the roast in a roasting pan and generously coat with the garlic herb butter.
Roast in the oven for about 60 minutes or until the internal temperature reaches 135°F (for medium-rare).
Remove from the oven, cover with foil, and let rest for 10 minutes before slicing.
Notes
For extra flavor, you can marinate the meat overnight in the refrigerator.
