  • 2.5 lbs chicken breasts cut into strips
  • 5 tablespoons olive oil divided
  • 2 tablespoons Italian seasoning or to taste
  • 1 cup orzo pasta
  • 1.5 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 1 lemon zest and juice
  • 2 tablespoons fresh parsley chopped
  • 2 cloves garlic minced
  • 0.5 teaspoon salt or to taste
  • 0.5 teaspoon black pepper freshly ground

Preparation Steps

  • Heat 3 tablespoons of olive oil in a large skillet over medium heat. Season chicken strips with Italian seasoning, salt, and pepper.
  • Cook chicken in the skillet for about 6-8 minutes per side until golden and cooked through. Remove and set aside.
  • In the same skillet, add remaining olive oil and sauté garlic until fragrant. Add orzo and cook for 2 minutes.
  • Pour in chicken broth and bring to a simmer. Cook until orzo is tender and most of the liquid is absorbed.
  • Stir in heavy cream, Parmesan, and lemon zest. Mix until creamy.
  • Return chicken to the skillet, drizzle with lemon juice, sprinkle with parsley, and serve hot.
