Herb-Crusted Sausage Rolls with Sweet Dipping Sauce

  • 2.5 lbs mixed herb sausages casings removed
  • 18 oz puff pastry thawed
  • 3 large eggs divided
  • 1.5 cups breadcrumbs seasoned
  • 0.5 cup shredded mozzarella
  • 3 tablespoons fresh dill chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon coriander powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground
  • 2 tablespoons water

Sweet Dipping Sauce

  • 0.5 cup honey
  • 0.5 cup Greek yogurt
  • 0.5 cup whole grain mustard
  • 1 tablespoon apple cider vinegar
  • 0.25 teaspoon crushed red pepper flakes optional
  • 1 teaspoon chia seeds

Preparation Steps

  • In a large mixing bowl, combine sausage, breadcrumbs, mozzarella, dill, paprika, coriander, salt, pepper, and 2 eggs. Mix thoroughly.
  • Preheat the oven to 400°F (205°C) and line baking sheets with parchment paper.
  • Roll out the puff pastry sheets on a floured surface and cut each into three equal rectangles.
  • Divide the sausage mixture into portions and shape each into a log, placing them in the center of the pastry rectangles.
  • Wrap the pastry around the sausage logs, sealing the edges with a fork, and cut into smaller pieces.
  • Mix the remaining egg with water and brush over the rolls. Arrange on baking sheets.
  • Bake in the oven for 20-25 minutes until golden brown. Prepare the dipping sauce by mixing all sauce ingredients.

Serving

  • Cool the sausage rolls slightly and serve warm with the prepared sweet dipping sauce.

Store any leftovers in an airtight container in the refrigerator and reheat before serving.
