Instructions
Preparation Steps
Heat olive oil in a large pot over medium-high heat. Add beef cubes, seasoning with salt and pepper, and brown on all sides.
Remove beef and add onions and garlic to the pot. Sauté until onion is translucent.
Return the beef to the pot, add the beef broth, and bring to a simmer.
Add carrots, potatoes, barley, and tomatoes. Cover and let simmer for 45 minutes to 1 hour.
Add frozen corn and peas, simmer for an additional 10 minutes.
Taste and adjust seasoning if necessary. Serve hot.
Notes
This stew is perfect for freezing. Store in an airtight container for up to 3 months. Reheat gently before serving.
