Hearty Vegetable Beef Stew

This Hearty Vegetable Beef Stew is a comforting and delicious blend of tender beef, barley, and a mixed medley of vegetables simmered to perfection in a savory broth.

  • 2 lbs stew beef, cubed cut into 1-inch cubes
  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • 4 cups beef broth preferably low-sodium
  • 2 cups carrots sliced
  • 2 cups potatoes cubed
  • 1.5 cups barley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 can diced tomatoes 14 oz
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 2 tablespoons olive oil

Preparation Steps

  • Heat olive oil in a large pot over medium-high heat. Add beef cubes, seasoning with salt and pepper, and brown on all sides.
  • Remove beef and add onions and garlic to the pot. Sauté until onion is translucent.
  • Return the beef to the pot, add the beef broth, and bring to a simmer.
  • Add carrots, potatoes, barley, and tomatoes. Cover and let simmer for 45 minutes to 1 hour.
  • Add frozen corn and peas, simmer for an additional 10 minutes.
  • Taste and adjust seasoning if necessary. Serve hot.

Notes

This stew is perfect for freezing. Store in an airtight container for up to 3 months. Reheat gently before serving.
