Hearty Root Vegetable Soup with Lentils

  • 2 tablespoons olive oil for sautéing
  • 1 cup onion finely chopped
  • 1 cup carrot diced
  • 1 cup parsnip diced
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon smoked paprika
  • 6 cups vegetable broth
  • 1 cup lentils rinsed
  • 1 can diced tomatoes 15 oz can, with juice

Preparation Steps

  • Heat the olive oil in a large pot over medium heat. Add the onion, carrot, and parsnip, and sauté for about 5-7 minutes until the vegetables are beginning to soften.
  • Stir in the minced garlic, cumin, coriander, and smoked paprika. Cook for another minute, stirring constantly.
  • Pour in the vegetable broth and bring to a gentle simmer. Stir in the lentils and the can of diced tomatoes.
  • Cover the pot and cook for about 25-30 minutes, or until the lentils are tender.
  • Season the soup with salt and black pepper to taste. Serve hot and enjoy.

Notes

For added flavor, consider adding a splash of lemon juice or a sprinkle of fresh herbs like cilantro or parsley before serving.
