Hearty Rancher's Shepherd's Pie with Cauliflower Topping

  • 2 lbs ground beef lean
  • 1 cup chopped carrots finely diced
  • 1 cup peas frozen
  • 1 large onion chopped
  • 1 teaspoon salt or to taste
  • 1 teaspoon thyme dried
  • 24 ounces cauliflower florets steamed
  • 1 cup heavy cream
  • 2 tablespoons butter unsalted
  • 1 cup cheddar cheese shredded
  • 1 cup crispy shallots store-bought

Preparation Steps

  • Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  • Cook the ground beef in a skillet until browned. Add chopped onions, carrots, and peas. Season with salt and thyme; cook until vegetables are tender.
  • In a large pot, steam the cauliflower until fork-tender. Drain and mash with heavy cream and butter until smooth.
  • Layer the meat mixture in the bottom of the prepared baking dish. Spread the mashed cauliflower evenly on top.
  • Sprinkle cheddar cheese and crispy shallots over the cauliflower.
  • Bake in preheated oven for 25-30 minutes until cheese is melted and bubbly.

Notes

Feel free to customize with different vegetables or cheese types. To make it vegetarian, substitute beef with lentils.
