Hearty Lentil Vegetable Soup

This hearty lentil vegetable soup is perfect for a cozy evening. Packed with nutrients and flavors, it's an easy one-pot recipe that is both fulfilling and healthy.

  • 1.5 cups green lentils rinsed and drained
  • 2 tablespoons olive oil extra virgin preferred
  • 1 cup diced carrots about 2 medium carrots
  • 1 cup celery chopped
  • 1 cup onion diced
  • 1 teaspoon garlic powder or 2 cloves fresh garlic
  • 6 cups vegetable broth low sodium
  • 1 teaspoon thyme dried
  • 1 bay leaf bay leaf
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground
  • 1 cup chopped spinach fresh or frozen

Preparation Steps

  • Heat the olive oil in a large pot over medium heat. Add the carrots, celery, and onion, and sauté until softened, about 5-7 minutes.
  • Stir in the garlic powder, thyme, and bay leaf, and cook for another minute until fragrant.
  • Add the rinsed lentils and vegetable broth to the pot. Bring the soup to a boil, then reduce the heat to a simmer and cook uncovered for 30-35 minutes or until the lentils are tender.
  • Season the soup with salt and pepper. Stir in the chopped spinach and continue to simmer for 5 more minutes until the spinach is wilted.
  • Remove the bay leaf before serving. Enjoy your hearty lentil vegetable soup hot.

Notes

Feel free to add other vegetables such as zucchini or bell peppers for additional flavors and nutrients. Adjust the seasoning according to your taste.
