Instructions
Preparation Steps
Preheat the oven to 400°F (200°C). Line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, blend the milk, vegetable oil, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients, stirring until just combined.
Gently fold in the blueberries and toasted almonds.
Fill the muffin cups about two-thirds full.
Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
For extra flavor, sprinkle a little cinnamon sugar on top before baking.
