Hearty Almond Blueberry Muffins

  • 1.5 cups all-purpose flour or whole wheat flour
  • 0.5 cup granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.75 cup milk preferably whole milk
  • 0.25 cup vegetable oil
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup blueberries fresh or frozen
  • 0.5 cup sliced almonds toasted

Preparation Steps

  • Preheat the oven to 400°F (200°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, blend the milk, vegetable oil, egg, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients, stirring until just combined.
  • Gently fold in the blueberries and toasted almonds.
  • Fill the muffin cups about two-thirds full.
  • Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

For extra flavor, sprinkle a little cinnamon sugar on top before baking.
