Ingredients
- 1 1/2 cups diced mango chunks defrosted if frozen
- 1 medium carrot steamed until soft
- 2 tablespoons honey for the mango-carrot batch
- 1/4 cup water for the mango-carrot batch
- 5 tablespoons grass-fed beef gelatin powder for the mango-carrot batch
- 2 cups halved strawberries fresh or thawed
- 1 small beet steamed until soft
- 2 tablespoons honey for the strawberry-beet batch
- 1/4 cup water for the strawberry-beet batch
- 5 tablespoons grass-fed beef gelatin powder for the strawberry-beet batch
Instructions
Line a 9-inch bread loaf pan with parchment paper and spray it with cooking spray.
Place the fruit and cooked vegetable of choice in a high-speed blender.
Add the water and honey, and puree until very smooth, at least 5 minutes.
Taste the mixture, add more honey if needed, and blend again until smooth.
Pour the mixture into a large-bottomed stock pot. Sprinkle the gelatin evenly over the surface and leave it undisturbed for 5 minutes.
When the surface wrinkles, whisk in the gelatin. Cook over medium heat, whisking constantly, until smooth. Do not let the mixture boil.
Pour the mixture into the prepared loaf pan and let it set for at least 3 to 4 hours; it can be covered and left overnight.
Use mini pie cutters to cut shapes. Snip scraps into small pieces with scissors and mix them into the shapes.
Keep the fruit snacks refrigerated for up to 5 days.
Prepare the mango-carrot and strawberry-beet flavors as separate batches, using half of the listed batch ingredients for each flavor.
