Hashbrown Breakfast Casserole

A hearty and easy breakfast casserole made with crispy hashbrowns, eggs, cheese, and your favorite breakfast meats.

  • 2 lbs hash browns
  • 6 large eggs
  • 1 cup milk
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a large bowl, whisk together eggs, milk, salt, and pepper.
  • Add hashbrowns, cheese, and bacon to the egg mixture. Stir to combine.
  • Pour the mixture into the prepared baking dish.
  • Bake for 40-45 minutes, or until golden brown and set.
  • Let cool slightly before serving.

Notes

This casserole can be made ahead of time and baked in the morning. Add other vegetables or meats as desired.
