Instructions
Preparation Steps
Brown ground beef in a large skillet over medium-high heat. Drain off any excess grease.
Add butter to the skillet and melt. Add onion and mushrooms and cook until softened.
Stir in flour, salt, pepper, and paprika. Cook for 1 minute.
Gradually whisk in beef broth and sherry. Bring to a simmer.
Reduce heat to low and simmer for 5 minutes, or until sauce has thickened.
Stir in sour cream. Heat through. Do not boil.
Serve over egg noodles or rice.
Notes
For a richer flavor, use cream instead of sour cream. You can also add a tablespoon of Dijon mustard for extra tang.
