  • 2 lbs boneless chicken breasts thinly sliced
  • 12 slices sourdough bread or ciabatta
  • 6 slices provolone cheese or mozzarella
  • 1 head romaine lettuce washed and chopped
  • 1 cup Caesar dressing store-bought or homemade
  • 2 tablespoons olive oil for grilling
  • 1 teaspoon coarse black pepper or to taste
  • 1 teaspoon salt for seasoning

Preparation Steps

  • Season and grill the chicken slices: Brush the chicken with olive oil, sprinkle with salt and black pepper. Grill the chicken over medium-high heat until cooked through.
  • Prepare the bread: Lightly brush both sides of each bread slice with olive oil.
  • Assemble the panini: Place grilled chicken on bread, add cheese, and top with chopped lettuce. Drizzle Caesar dressing over the top.
  • Grill the sandwiches: Place assembled sandwiches onto a preheated panini press. Grill until the cheese is melted and the bread is golden brown and crispy.
