Greek Cucumber Tomato Salad

A refreshing and simple Greek cucumber and tomato salad, perfect as a side dish or light meal.

Ingredients
  

Main Ingredients

  • 2 large cucumbers peeled, seeded, and chopped
  • 3 large tomatoes chopped
  • 0.5 cup red onion thinly sliced
  • 0.5 cup Kalamata olives pitted and halved
  • 4 ounces feta cheese crumbled
  • 0.25 cup fresh parsley chopped

Dressing

  • 0.25 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • In a large bowl, combine the chopped cucumbers, tomatoes, red onion, and Kalamata olives.
  • In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper until well combined.
  • Pour the dressing over the vegetable mixture and toss gently to coat.
  • Gently fold in the crumbled feta cheese and chopped fresh parsley.
  • Serve immediately or chill for at least 30 minutes to allow the flavors to meld.

Notes

This salad is best enjoyed fresh. You can adjust the amount of red onion to your preference.
