Gourmet Grilled Cheese with Tomato Bisque

This delightful recipe pairs a gourmet grilled cheese packed with artisanal cheeses and succulent tomatoes with a rich and creamy tomato bisque. Perfect for a cozy evening at home!

Ingredients
  

Grilled Cheese Ingredients

  • 8 slices sourdough bread preferably thick-sliced
  • 8 slices sharp cheddar cheese or your favorite cheese blend
  • 4 tablespoons unsalted butter softened
  • 2 whole heirloom tomatoes sliced

Tomato Bisque Ingredients

  • 2 tablespoons olive oil
  • 1 cup yellow onion diced
  • 4 cloves garlic minced
  • 28 oz canned whole tomatoes preferably San Marzano
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon sugar to taste

Instructions
 

Grilled Cheese Preparation

  • Spread butter on one side of each slice of sourdough bread. Place two slices of cheese and tomato slices between two pieces of bread, butter side out.
  • Heat a skillet over medium heat and grill each sandwich for 4-5 minutes per side, or until golden brown and cheese is melted.

Tomato Bisque Preparation

  • In a large pot, heat olive oil over medium heat. Add onions and cook until translucent.
  • Add garlic and cook for another minute. Pour in canned tomatoes and vegetable broth; let simmer for 20 minutes.
  • Use an immersion blender to blend the mixture until smooth. Stir in heavy cream, basil, and sugar. Allow to simmer for an additional 5 minutes.

Notes

For a spicy twist, try adding a dash of red pepper flakes to the bisque.
