  • 1 cup gluten-free all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup unsalted butter softened
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the vanilla extract.
  • Gradually add the flour, mixing until just combined.
  • Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
  • Cut out cookies with a cookie cutter and place them on a baking sheet.
  • Bake for 8-10 minutes, or until lightly golden brown.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best enjoyed fresh. Store leftovers in an airtight container at room temperature.
